I have a "doughnut of the month" vision on my mind and since we are currently in January, that makes these Matcha Doughnuts, the doughnut for this month. Who knows if I will keep this going, a monthly doughnut recipe compilation (shrugging shoulders). I plan however to share a monthly healthy inspired food, meal, snack, dessert or main course. Yay for healthy food that actually tastes good!
I don't want to create long-winded blog posts when it comes to my food recipes because I personally just want the recipe, not the life story when I'm on the interwebs looking for healthy food inspiration.
I will do you a solid and just spill the goods for this doughnut recipe, go ahead and try the recipe and let me know in the comments how you enjoyed them?
Okay, Great. As promised here is the recipe. And I should mention the doughnuts pair great with tea, coffee, and plain old almond milk!
1/4 C. Matcha Powder
1/2 C. Olive Oil
3/4 C. Honey/ Swerve Sweetener
3/4 C. Coconut Flour
1 Tsp. Baking Soda
1 Tsp. Salt
1 Tsp. Almond extract
10 Drops of Chlorophyll
Directions: Preheat oven to 350 degrees. Coat doughnut mold with olive oil. Add olive oil, eggs, honey, and almond extract into a mixing bowl, whisk ingredients together until evenly incorporated. Add baking soda, salt, matcha powder and coconut flour to the mixing bowl. Mix all the ingredients together until all ingredients are blended. The dough will thicken to a cake batter consistency. Pour doughnut batter into the doughnut molds, add 2-3 drops of liquid chlorophyll to the top of each doughnut and use a fork to marble the chlorophyll drops into any design you like.
Bake for 15-20 minutes. Enjoy!
