It's September, fall season and apple season, so let's enjoy a few doughnuts in celebration of all things comfort, spicy, and apple.
I'm not much of a fan of traditional fried doughnuts but after I started working on this recipe for healthy doughnuts, I am a new convert to "Team Doughnut" and I pledge to love healthy doughnuts that actually taste good. Amen.
These doughnuts are amazing! Light and cakey in texture, gluten free, dairy free, and delicious.

Healthy Apple Spice Doughnut Recipe
Dry Ingredients:
2 C. Almond Flour
1 Tsp. Baking Soda
1/2 Tsp. Sea Salt
2 Tsp. Cinnamon
1 Tsp. Ginger Powder
1/2 Tsp. Nutmeg
Wet Ingredients:
5 Tbsp. Honey
1 Tsp. Vanilla Extract
2 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Apple Cider Vinegar
1/3 C Apple Sauce
2 Eggs (room temperature + separate yolks from egg whites)
Directions:
Preheat oven to 350 degrees and grease your doughnut mold with olive oil.
Sift all dry ingredients together in a bowl until the dry mixture is consistent and thoroughly combined, set aside. Use a separate bowl for the wet ingredients. Start by whisking the egg yolks together, add olive oil, honey, vanilla extract and apple cider vinegar to the wet mixture and whisk until all ingredients are incorporated. Next, add the apple sauce to the wet mixture and whisk until combined.
Add your egg whites to a food processor or blender for at least 1-2 minutes to create a whipped texture.
Excluding the egg whites, slowly add sifted dry mixture to the wet mixture in 1/4 cup intervals until all of the wet and dry ingredients are combined.
Next, gently fold the whipped egg whites into the doughnut batter with a spoon until the mixture is blended.
*Spoon the doughnut mixture into the doughnut molds. Bake for 25-30 minutes. Lightly brush the doughnuts with olive oil or coconut oil then dip each dough nut in Swerve (plant based sugar replacement- available on amazon.com) or drizzle honey and sprinkled cinnamon over the doughnuts as an icing.
